Lentils are so versatile that they can be made for a hot or cold preparation

Using grains or legumes, like lentils, as a base for your salad is a great way to change things up. The key to this salad is the bright citrus and abundance of herbs.

Have solo or pair with other items like shrimp, steak or tofu!

Make ahead of time and keep in your fridge for a fresh lunch throughout the week or for your next picnic in the park. It will fill you up and energize you for a day and just get’s better with time!

You can swap out the ingredients for others you may have handy. This recipe is your guide.

Fresh Lentil Salad

Servings: 4 people

Prep Time: 30 minutes

INgredients

  • 1 cup Lentils

  • 1/2 bunch Swiss chard (can use any firm green - kale, collards, bok choy)

  • 2-3 radishes, sliced thin

  • 1/2 bunch soft stem herbs (parsley, cilantro, basil, mint or any combination of herbs)

  • 1/2 cup chopped onions (can use any variation of onion as well - leeks, shallots, scallions)

  • 1 bell pepper (optional)

  • 1/4 cup nuts, chopped (optional)

  • 1/4 cup yellow raisins (optional)

  • 1-2 lemons

  • Olive Oil

Instructions

  1. Cook your lentils: Simmer lentils in plain water until tender. Be sure to stir occasionally so that they cook evenly. Once tender, strain well.

  2. Squeeze with 1/2 fresh lemon and season with salt. Let cool.

  3. Chop your veg: Finely chop herbs, swiss chard and onions. Use the whole stalk of swiss chard from top to bottom. Small chop bell pepper and nuts if you’re using them.

  4. Mix all ingredients in a bowl. You want to make sure there is an even amount of all ingredients throughout so if you want to add more veggies, go for it!

  5. Dress your salad: Drizzle some olive oil and squeeze fresh lemon over your salad. Be sure to add liberally so that the salad is nice and moist. Season very well with salt and pepper. The salt and pepper will bring out all the flavors in this dish.

    (You can also use your favorite pre-made dressing or sub the lemon for a vinegar of your choice.)

This recipe really should just be a guide. What’s needed is the lentils, chopped veg of your choice & a nice bright dressing. All other details are up to you! Get creative!

Some great add ins: olives, feta cheese, shrimp, cucumbers

Pro Tip: We also love pre-making our lentils ahead and freezing them in the freezer. You can do a quick defrost by putting them in a strainer and running hot - warm water over them.
